The Beyond The Clouds 2022 is Elena Walch's white flagship and is one of the most acclaimed wines from Alto Adige. The wine is based on Chardonnay, supplemented with small amounts of other aromatic grapes from high-altitude vineyards around Kaltern and Tramin. The combination of mountain climate, chalky soils and careful wood aging produces a wine of exceptional depth, tension and elegance.
Tasting notes
Clear golden yellow in the glass. In the nose intense aromas of exotic fruits (pineapple, mango), white flowers, rose petals, lime zest and a hint of fine toast and vanilla. In the mouth round, rich and silky, but with fresh acidity and a mineral undertone that keeps the wine elegant. The finish is long and layered, with a subtle woody touch.
Food pairing
Excellent with refined dishes such as grilled lobster, pan-fried turbot, seafood risotto, poultry in creamy sauces or mature cheeses. Also very suitable for dishes with white truffle or beurre blanc.

Vinification & Maturation
The grapes are harvested by hand when the Chardonnay reaches optimum ripeness. All the grapes are pressed together and fermented in new French oak barriques, followed by weekly bâtonnage for three months. The wine is then aged in barriques for another ten months and at least six months in bottle before release.
