A rare and iconic vintage from the heart of Le Mesnil-sur-Oger

The Salon 2012 is one of the most sought-after Champagnes of the house Salon, produced only in exceptional years. This Blanc de Blancs comes from Grand Cru vineyards in Le Mesnil-sur-Oger and is characterized by its elegance, complexity and unparalleled aging potential.

Tasting notes
Bright golden yellow with a fine, persistent mousse. On the nose aromas of citrus oil, wet stones, freshly baked bread, white berries and oyster shell. The palate reveals a full, deep and concentrated flavour with a tight core of fruit, lively acidity and an elegant, fine mousse. The finish is long and resonant, with a structured and powerful expression.

Food pairing
Excellent with seafood such as langoustines, scallops or caviar. Also delicious with miso-glazed turbot, roasted veal with morels or white asparagus.

Vinification & Maturation
The grapes are harvested by hand and undergo a fermentation without malolactic fermentation to preserve freshness and liveliness. The wine matures for 10 years on the lees in the bottle, followed by a low dosage of 5 g/l at disgorgement.
