The 2013 Salon Le Mesnil is the 44th release in the history of the Salon house and embodies the essence of an exceptional Blanc de Blancs. Produced from a single vintage, a single grape variety (Chardonnay), and from a single cru (Le Mesnil-sur-Oger), this champagne reflects the unique vision of founder Aimé Salon. After ten years of maturation on the fine lees and a dosage of 5.5 g/l, this wine reveals an unparalleled finesse and complexity.
Tasting notes
In the glass, the wine shows a brilliant, light golden color with green reflections. The nose is refined and expressive, with aromas of white flowers, lime blossom, jasmine and bergamot, complemented by notes of lemon sorbet, roasted hazelnuts and brioche. On the palate, the champagne is tight and mineral, with a lively acidity and a silky mousse. The finish is long and elegant, with a characteristic chalky minerality.

This champagne is an excellent accompaniment to refined dishes such as a terrine of salmon and oysters in aspic, or classic Champagne specialties such as pig's trotters and veal sweetbreads. Also delicious with foie gras croquettes.
